Loaded Potato Soup

This is a recipe I created to utilize the cheap staple… Potatoes… along with a variety of other vegetables.  Feel free to mix it up, leave out vegetables, or add different ones. 🙂 I chop my potatoes very small… think bite-size.  They cook faster that way, and my little people can handle them better.



4 Large peeled, diced potatoes

1 tsp salt

4 cups water

Combine. Cook till soft. Add following ingredients. 

1 qt milk

4 T butter

1/2 tsp EACH: salt, pepper, garlic powder, chicken bouillion (homemade)

1 c chopped ham

2 T cornstarch to thicken (with 1/2 c milk)

1 c Shredded cheddar cheese

2 c green peas

2 c frozen corn

2 green onions, chopped

1 c carrots, chopped or sliced

Cook until veggies are soft. Serve with saltines, or without. 😉 Enjoy! 🙂
